What are "pinch-off saturation behavior" and "velocity saturation behavor"
and what's the differences?

The current in a MOSFET saturates when VDS gets too high. It either
saturates because of pinch-off of the inversion layer near the drain, or
because the electrons reach the maximum allowable velocity. The VDS when
these conditions occur are different.
